I hope everyone had a lovely day today! I’ve been battling some health issues lately (see the last Gratitude Friday post) and today I felt somewhat normal again finally.
Last week’s meal plan was another success with the little and the baby daddy. The creamy chickpea curry from Food Faith Fitness was quick, simple, and easy. The only addition I plan to make next time is I’ll add more veggies to the mix. Rachel Cooks‘s healthy queso dip with butternut squash was a definite repeat dish as well as her slow cooker creamy chicken and wild rice soup which Amelia devoured! The cilantro lime fajita salad from My Natural Family was really yummy and healthy. My only complaint is I had to use a lot of dishes to make this dish so the clean up was a bit of a nightmare. However, the food itself was perfect! The mushroom stroganoff from Skinny Taste was excellent. Another super tasty yet simple dish to make.
This week’s meal plan is all about on-the-cheap food. Since I wasn’t able to work last week and my renegade cat Bubba cost me an arm and leg getting into a cat fight and needing surgery, we are needing to pinch our pennies for sure. So most of the “dishes” are going to be tried and true easy-peasies.
Good old fashioned tacos. I’m talking ground beef with seasoning, hard taco shells, cheese, and veggies. Yup! Cheap, cheap, cheap! And yummy 🙂 Reminds me of my childhood.

Frittata time! Clean out whatever is in the fridge, throw it into a baking dish, top it with eggs, and bake. Done.
