There have been a lot of life changes for me since the beginning of 2017. Change can be hard and scary. Change can also be exactly what one needs if the timing is right and the type of change is meant to be.
My personal compass for knowing when change is the right thing is when all of life’s pieces fall in to place effortlessly once the change begins. There’s that detail you feared might pose a huge problem and then all of sudden a solution reveals itself and that detail is no longer an issue. You open that window and are afraid you might have to weather a monsoon but all of a sudden you realize the sun is finally shining in your room instead of the dark clouds you’ve been battling.
If you stop and listen to the universe or God or whatever you choose to call your higher power, you’ll find the answers are always there you just have to be open to them. You have to let go of fear. You have to listen to your own voice and trust that your compass will steer you in the right direction and that the universe will provide and open up if you put forth positive energy.
The pieces are falling in to place for me and I am so utterly grateful. It’s been a tough few years for me. It’s been a time of intense upheaval and many brick walls sending the strong message, “WRONG WAY!”
I floundered and kept banging my head against those brick walls because I was scared of turning around and walking down that unknown and seemingly unpredictable path. I finally took that first step and fell down the rabbit hole. A rabbit hole that has been waiting for me to be ready to accept. I am ready now and the rewards have been tremendous.
Today my heart is full of gratitude. Today my heart is light. Today my heart isn’t worried because validation touches me at every turn.
Sliders are the perfect toddler food. Hopefully my picky eater will like these. They certainly look promising.
I’m excited to try this! I’ll add a salad or green beans as a side.

I hope everyone had a lovely Thanksgiving! We are gearing up for Christmas over here and my house is getting merrier and merrier every day. We bought a Christmas tree this weekend and you know what? It’s my first ever Christmas tree as an adult! Isn’t that crazy and sad! So far all of my animals are leaving the tree alone, however the toddler keeps taking the decorations off the tree and playing with them. sigh
If you follow my Weekly Meal Plan series you know that I was supposed to begin the elimination diet this week. Well, upon further research and thought, I’ve decided to postpone until after the holidays. We have too many parties and family gatherings to go to where it will be a complete pain to have the 3 of us on such a restricted diet that I figured we can just wait until things settle down before embarking on a limited ingredient cleanse. I’ve been researching elimination diet recipes and I’m excited to try them out and share some of them with you after the new year!

This is total stoner food. I debated on tweaking this recipe to make it a little healthier, but I think I’m going to make it as it is because you know what? All in moderation is okay right?!
Chicken cordon bleu is one of my favorite chicken dishes. I usually make my own recipe, but I am posting this one because I like the sauce Lil Luna uses as a twist to an otherwise classic recipe.

Happy Thanksgiving week! I’m only planning on cooking three dishes this week due to Thanksgiving festivities. Remember, this is our last week of food freedom before we embark on the elimination diet as a family. That being said, I want to eat all the butter and cream and breading this week.

I’ve been craving fish lately. It’s been a while since I’ve cooked tilapia. I plan to serve this with rice and baked asparagus.
