Today is the first official day of SPRING! Woooooohoooooo!! Unfortunately, it’s cold and dreary here in Asheville haha!
Last week’s meal plan contained some gems! The Mongolian beef ramen noodles from Jo Cooks was phenomenal and really easy to make. There were zero leftovers it was so good. The low carb baked chicken tenders from The Chunky Chef were the best chicken tenders I’ve had in. my. entire. life. Seriously! I’m not exaggerating. They were AWESOME and so easy to make.
I promised you all a quiche lorraine recipe. I am annoyed with myself because I planned to take some pictures of the finished product, but by the time I remembered to do so we had already eaten the quiche lol! Sadly, there are no pictures, but I will share the recipe 🙂
My favorite quiche lorraine recipe comes from the cook book Country French cooking (A Sunset book). This is a great cook book for those who like French food. All the recipes are very authentic and easy to follow.
I won’t post the exact recipe because I don’t have the rights to do so, but I will give you the list of ingredients and if you are intrigued and want to try it out then Amazon sells this cookbook for a mere $3.15.
- swiss or Gruyére cheese
- whipping cream or half and half
- pie crust
It’s really easy to make and delicious.
On to this week’s meal plan!
I figured since it’s going to be cold and dreary this week that this is probably my last chance to make a soup before the warm weather sets in.
healthy queso dip with butternut squash would pair well with this don’t you think?
